How to Make Curry Flavored Unohana - Okara Recipe

As I mentioned in my previous entry, I found okara at Japanese supermarket and cooked curry flavored unohana this week. Okara is tofu byproducts, so this turned out to be very nutrient side dish and tasted so good! Today, I'm going to share how to make it with you.
Curry Flavored Unohana

Ingredients (6 servings)

3 dried shiitake mushroom
1/2 of  cup of water
1 tablespoon of vegetable oil
1 carrot (cut into strips)
1 bunch of green onions (finely chopped)
1/4 lb (100g) of pork (cut into strips)
10 oz (300g) of okara
3 tablespoons of curry powder
1 teaspoon of chicken broth powder
3 tablespoons of soy sauce
3 tablespoons of mayonnaise
1/2 cup of shredded cheese
nip of salt and black pepper

1. Soak dried shiitake into hot water for 15 minutes. then cut them into stips. Keep the hot water as broth.

2. Heat oil in a large pan over high heat. Stir-fry shiitake, carrot, green onions and pork for about 5 minutes until vegetable is cooked. Add okara and stir-fry them for 1 minute.

3. Add curry powder and mix well.

4. Add chicken broth powder, soy sauce and shitake broth from step1. Simmer until liquid evaporates.

5. Turn off the heat. Add mayonnaise, cheese, salt and black pepper. Mix them thoroughly.

6. Enjoy!
